Stewed West Indian Gherkin (Komkomber stoba)


Stewed West Indian Gherkin - Komkomber stoba prepared by groep 6a



Ingredients

  • 40 West Indian Gherkin
  • 1 pound salted pork tail
  • 1 pound salted meat
  • 2 pounds lion-ribs or spareribs
  • 1 large onion
  • ½ teaspoon nutmeg
  • 2 garlic cloves, minced
  • (or 1-teaspoon garlic powder)
  • 1 ripe tomato, skinned, deseeded and chopped
  • 1 tablespoon tomato paste
  • 2 tablespoon butter or margarine
  • 3 tablespoon ”soy sauce”
  • 1 teaspoon sugar


Direction :


  1. Cut pork tale into 2-inch size. 
  2. Cut salted meat, into 2-inch cubes. 
  3. Soak together, overnight in refrigerator.
  4. Next morning, discard water.
  5. In large pot put pork tale and salted meat, add fresh water and cook over medium heat, till pork tail is tender. 
  6. Scoop out the pork tail, and leave salted meat to finish cooking. Salted meat takes longer to get tender. Scoop out the cooked meatand set aside with the pork tail.
  7. Cut off the long “tail” from the “komkomber”. Also scrape off the small brown crown on the other end.
  8. Cut each “komkomber” in four or six wedges lengthwise. 
  9. Cook the cut “komkomber” for 10-minutes, turn off heat and let cool. This makes it easier to deseed them. To deseed, press each wedge individually to release seeds trough a colander, with openings larger then the seeds, rinse off, till all seeds are released. 
  10. In a large pot, heat oil and butter, sauté the onion, nutmeg, garlic, chopped tomatoes, tomato paste and soy sauce, for 10 minutes.
  11. Cut ribs individually and add to the sautéed ingredients. 
  12. Add 2 cups water and simmer over medium heat till ribs are done. 
  13. Scoop out ribs, set aside together with tail and meat.
  14. To the sauce that’s left in the pot, add the “komkomber”, stir, cover pot and cook over medium heat. Do not add more water.
    The “ komkomber” will produce its own natural vegetables juices.
  15. When the “komkomber” is done and tender, but whole, add the meat products, stir and cook for 10 more minutes.

You can serve this with funchi, rice or mashed potatoes. Enjoy your meal!

Recipe - Corned beef

Corned beef prepared by groep 5a


Ingredients


  • 1 can corned beef
  • 1 chopped tomato
  • 1 chopped onion
  • 1/4 chopped green pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1 1/2 teaspoon soy sauce asin
  • 2 teaspoons piccalilli
  • 2 tablespoons ketchup
  • 3 tablespoons oil

Preparation (watch the video)



  1. Chop Ingredients.
  2. Heat oil and fry your onion, tomato and peppers until soft.
  3. Add the garlic powder, soy sauce and ground cumin
  4. Let about 20 sec. simmer
  5. Add the corned beef, piccalilli and ketchup
  6. Let everything about 8 minutes over medium heat fry
  7. Stir occasionally
  8. and your meal is ready!

Serve with rice or funchi, fried banana and a salad. Enjoy it...

Recipe - Crabmeat salad

crabmeat salad 


Ingredients:

            • 250 grams of crabmeat,
            • 1 lemon, 
            • a can of whole kernel corn, 
            • 1 onion,
            • mayonnaise,
            • some celery   


Preparation: 


  1. Cut the crabmeat in very small pieces 
  2. put them in a glass bowl. 
  3. Squeeze the lemon juice all over the crabmeat and stir. 
  4. Cut the onion and the celery in small pieces 
  5. add them with the corn to the crabmeat. 
  6. At last you put some spoons of mayonnaise and you mix it all together. 
  7. Your delicious crabmeat salad is ready!!! 
  8. You can serve it with bread or toasts

Recipe - Tuna fish salad


Tuna fish salad prepared by groep 3a


Ingredients 


  • 1 can of tuna fish in vegetable oil and salt
  • Lemon
  • Garlic powder
  • Chopped onion
  • 1 tablespoon of Thousand Island
  • 1 tablespoon of mayonnaise
  • Salt

How to prepare (watch the video)



  1. Marinate the tuna with the lemon. 
  2. Then add a little of the garlic powder and salt.
  3. Mix all the ingredients together and... 
  4. Voilà, your tuna fish salad is done.
Serve with crackers.

Recipe - Vegetables Soup

What you need

  • onion
  • selery
  • potato
  • pumpkin
  • carrots
  • corn
  • continental noodle soup

How to cook the vegetable soup (watch the video)

 

  1. Boil some water 
  2. Cut all the vegetables. 
  3. Peel the potato and carrots. 
  4. Cut and wash them.
  5. Put the pan with some boiled water. 
  6. Stir the vegetables in the pan until  they cook. 
  7. Put the potato, corn and carrots and let them cook. 
  8. At last put the continental soup. 
  9. Let all the ingredients boil together. 
  10. After 10-15 min. your vegetables soup will be ready. 
  11. Get a little bit in a bowl and enjoy it.

recipe - pumpkin pancakes


Pumpkin pancakes -prepared by groep 1-2 a

What you need

  • 2 or 3 cup flour
  • Pumpkin (cooked)
  • Milk
  • Sugar
  • 2 eggs
  • Raisin
  • Baking powder
  • Vanilla (essence)

How to make (look at the video)


  1. Chop the cooked pumpkin, and 
  2. put it in a bowl that contain the flour, some sugar and mixed them. 
  3. Add the milk, 
  4. stir
  5. put 2 tsp baking powder, the eggs, some vanilla and the raisins. 
  6. keep stirring till the mix of pancake is as you want.
  7. You can fry them in just a little vegetable oil.

Recipe - porridge cornmeal with tamarind (papa maishi chiki tamarein)

Ingredients

  • Cornmeal 
  • Water 
  • Salt 
  • Sugar 
  • Tamarind





Instructions

  1. Peel the tamarind
  2. Boil the tamarind with some water in a pan
  3. Add water to the cornmeal (maishi chiki) in a separate bowl
  4. Add this mixture to the boiling tamarind
  5. Add a pink of salt and 
  6. 4 scoops of sugar
  7. Keep stirring until thick enough
  8. Serve in a bowl or a plate 

 Enjoy it!!!

Recipe - Cala

Cala - a spicy, different cocktail snack

Ingredients:

1/2 lb. boonchi wowo pretu, or black-eyed peas
1 tsp. salt
1/ cup water
2 white of eggs
corn oil







Preparation directions

 

  1. Soak overnight in ample water:
    • 1/2 lb. boonchi wowo pretu, or black-eyed peas
    • 1 tsp. salt
  2. Place the peas in the folds of a towel
  3. Rub vigorously to remove skins
  4. Discard the skin and 
  5. Dry the peas thoroughly
  6. Put them through a food grinder
  7. Beat in:
    • 2 white of eggs
    • 1 tsp. salt
  8. While beating, add a little at a time:
    • 1/2 cup water
  9. Continue beating until batter is fluffy and double the original quantity
  10. Heat the oil in a pan
  11. Drop by teaspoonfull into deep, hot fat. 
  12. Remove when golden brown and 
  13. Drain on absorbent paper. 
  14. Serve piping hot.

  • cherries are tucked inside marsmallow with toothpick
  • place on waxed paper-covered baking sheet
  • cover them
  • refrigerate 20 - 30 minutes

Recipe - Lèter (cookies) prepared by Groep 6 with juf Arlène

What you need:

1/2 lbs margarine
250 g sugar
3 eggs
2 spoon of baking powder
650 g flour
1 tsp ground cinnamon
1 tsp ground all spice
1/2 tsp ground nutmeg
3/4 tsp ground clove
1 spoon vanilla aroma (essence)
1 tsp rose aroma (essence)
350 g crushed peanuts
    (bake peanuts for several minutes in the oven
    peel the peanuts
    crush the peanuts in a kitchen machine)
Oven


How to prepare...


  1. Mix sugar and margarine
  2. Add the eggs one at a time
  3. Add the vanilla and rose essence
  4. Add sifted flour little by little
  5. Mix well for about 5 - 10 minutes
  6. Add all the 4 spices
  7. Keep mixing for another 5 minutes
  8. At the end add the crushed peanuts
  9. Mix for another 5 minutes
  10. Leave the dough for about 5 minutes
  11. Heat the oven till 250 degree Celcius.
  12. Put greaseproof paper on the baking tray
  13. Take a little bit dough (watch the video) and make the letter S en put them in the baking tray
  14. Put the baking tray in the oven and bake the "Lèter" for about 15 minutes in the oven.
  15. Enjoy the "Lèter".

Recipe - Tuna fish Salad

Together with their teacher you see the pupils of Group 1-2D preparing Tuna Salad. Take a look at the video:





Tuna fish Salad
Preparation time: 30 minutes

Ingredients:
2 large cans of tuna fish chunks
2 Apple cut into small pieces
3 Tablespoons of mayonnaise
1 / 4 teaspoon lemon juice
Complete season to taste
1 can piti pois
1 can corn grains
1 can red beet


Directions
  1. In a bowl combine all ingredients. 
  2. For this recipe, chilling for 1- 2 hours is strongly recommended.  
  3. Serve with toast.  
  4. Enjoy

Recipe: Broken Glass Jello


Broken Glass Jello
Preparation time: longer than 2 hours

Ingredients:
Colored Jello:
1 box red Jello
1 box green Jello
1 box orange Jello
1 box yellow Jello
2 envelopes unflavored gelatin

White gelatin:
2 cans of sweetened condensed milk (don't use evaporated milk)
1 teaspoon white Vanilla aroma
2 cans of cream of nestle
1 can of full cream milk
3 envelopes unflavored gelatin

Directions:
  1. For each flavor, dissolve 1/2 envelope unflavored gelatin and one box of jello in one cup of boiling water and 1/2 cup cold water. 
  2. Pour into a container and chill (overnight is best). After chilling the four flavors, cut them into small blocks. 


    Then...
  1. In a bowl, sprinkle 3 envelopes unflavored gelatin into 1/2 cup cold water.
  2. After the gelatin blooms, add 1 1/2 cup boiling water and dissolve. 
  3. In a separate bowl beat the cream of nestle. 
  4. Add gelatin, the can of milk, 1 teaspoon white vanilla and the cans of condensed milk. 
  5. Stir well. 
  6. Put the prepared blocks jello into a cup and pour the milk mixture over jello. 
  7. Cover the cup with a lid and chill overnight. (Although not shown here, it is a good idea to skim off the bubbles for a nicer finished product.)  
  8.  
  9. Enjoy

Recipe of Johnny Cake

The students of group 1-2D watch attentively how the teacher does the ingredients together, because later they will do it themselves. The kneading will go a bit difficult. That's the teacher's job. And the baking they will also leave it to the teacher. Take a look...

 

The recipe of Johnny Cake sufficient for 10 to 12 pieces.
Preparation time: 2 hours

Ingredients:
  • 500 g flour
  • 2 tablespoon sugar
  • 2 teaspoon salt
  • 2 tablespoon margarine
  • 1/2 cup cold water
  • 250 ml of full cream milk
  • 1 cup vegetable oil for frying

Directions:
  1. Sift the flour, baking powder, and salt together into a large mixing bowl. 
  2. Mix together with sugar and margarine.
  3. make a well in the flour mixture and add the milk slowly. Mix until mixture is not sticky.
  4. Roll the dough into a long strip and cut it into 10 - 12 equal balls.
  5. Sprinkle some flour on a table and place the balls on it. This avoids that they're going to stick together. Cover the balls with a wet squeezed dry kitchen cloth an leave it for 10 minutes.
  6. Flat each ball with your finger tips and palms. Cover them for another 25 minutes.
  7. Heat oil in a heavy bottomed frying pan over medium-low heat until hot.
  8. When oil is hot add flattend dough.
  9. Fry the Johnny Cakes in the hot oil until both sides are golden brown.
  10. Remove the Johnny cakes and put them on kitchen towels to absorb fat.
  11. Enjoy.
